Southwestern Chicken Melt

Some grilled chicken breast, thinly sliced
2 slices sourdough bread
2 tablespoons Cahoots Chipotle Mayonnaise
1 green chile, roasted
1-2 slices cheddar cheese
2 slices red onion
2 slices ripe tomato


Grill sourdough bread. Spread Chipotle Mayonnaise on the un-grilled side of both slices of bread. Top one slice of bread with chicken, chile, and cheese. Broil until cheese is melted. Finish with sliced onion and tomato then top with other slice of grilled bread.
